This coffee presents a creamy, full-bodied taste of caramel seasoned with nutmeg and candied orange peel on the palate. In the aroma, there is a pungent scent of nutmeg.
Description
This decaf originates from a collective of smallholder producers surrounding the town of Monte Bonito in the foothills of the Andes. All of the farms in this area share the same growing conditions, including soil, cultivars, climate, and plant care. This then creates a clear, strong profile that gives these different coffees a similar taste. After the coffee is picked, the Manizales cooperative gathers these lots paying a premium for quality cherries before they are wet milled. The coffee undergoes steaming as part of the decaffeination process before they are moistened with hot water to allow beans to swell and soften to extract the caffeine with the fermentation of sugar cane. This process helps preserve the complex and rich flavours of the coffee.
